Celebrate at Home This Festive Season

December is finally here! We can’t wait for work Christmas parties and big family gatherings but what about celebrating with your family at home?

There is nothing more festive than a cosy night in. If you live in Australia I know what you are thinking. There is nothing cosy about Christmas in the middle of summer! That doesn’t mean we can’t recreate a winter Christmas in our living rooms. Say hello to air-conditioning on a very low temperature (or lots of fans). Grab your friends and family (or make it a date night) and let the festivities begin!
Cover your couch in throw blankets and cushions and light your favourite Christmas candle. We love candles with wooden wicks, they crackle like a fire place. Now let’s talk coffee, this is our favourite holiday drink. We have included a hot, cold and vegan version:

White Chocolate Peppermint Mocha

Serves – 2      Prep Time – 10mins

Ingredients
2 Shots or Espresso (1 shot if you like a weaker coffee)
1/2 Cup of White Chocolate Chips (add more to make it sweeter)
1 Cup of Milk
1/8 Tsp of Peppermint Extract

Method
1.    Add all ingredients to saucepan on a low heat.
2.    Whisk until well combined.
3.    Continue to heat until reached your desired temperature.
4.    Serve and decorate if desired. (Whipped cream, mini marshmallows, crushed candy cane).

Other Appliances
Thermomix: 6 mins, 70 degrees, speed 3 (increase to speed nine for the last 30 seconds to create froth on top)
Microwave: Place all ingredients in microwave safe dish/cup. Microwave in 30 second intervals until all ingredients are dissolved and milk is desired temperature.

Alternatives
Iced: Melt white chocolate. Place all ingredients in blender. Add 1 1/12 cups of ice and blend for one minute.
Vegan: Swap milk for coconut or almond milk. Swap white chocolate for 70% (or higher) dark chocolate.
Single Serve: Halve the ingredients.
Hot Chocolate: Leave coffee out completely.
