Entertaining at Home: Frozen Mojito

Welcome to our first blog series, Entertaining at Home! Think recipes and decorations for dinner parties or Sunday brunch. Today we start with our favourite summer drink recipe and some fun variations.

Frozen Mojito

Serves – 4         Prep Time – 5mins


6 oz of White Rum (or Vodka)
1/2 oz of Simple Syrup
1/2 Bunch of Mint Leaves
2 Cups of Lemonade
1 Cup of Soda Water
Juice of 2 Limes

Note: Adjust lemonade and soda amounts to suit taste.


  1. Fill blender with ice.
  2. Add white rum, simple syrup, lime juice and mint leaves.
  3. Top with lemonade and soda water (yes, you can blend soda).
  4. Blend until ice is crushed (in a Thermomix speed 4, 1 min 30 secs increasing to speed 5 half way through).
  5. Garnish with lime slice and sprig of mint.


Fruity: Add 1 cup of strawberries or mango.
Tropical: Add 2 oz of Malibu (or swap the white rum completely with Malibu).
Virgin: Omit White Rum.
Dry: Omit lemonade and sugar syrup. Add extra soda water as desired.
Shaken: Fill shaker with ice, add white rum, lime juice, sugar syrup and crushed mint. Shake well and strain into glass. Top with soda and lemonade.
